			<content:encoded><![CDATA[<p>In my quest to try different Squashes, this time was Spaghetti squash.  I didn&#8217;t realize that all squashes are NOT created equally&#8230;texture-wise.  Spaghetti squash it turns out, has an actual noodle consistency.  Hence &#8220;Spaghetti&#8221; squash.  Nevertheless, I googled some version and then just eyeballed the amount of everything myself.</p>
<p><strong>Ingredients:</strong></p>
<p>1 Spaghetti Squash</p>
<p>1-2 cans of diced tomatos, drained (Double check if it&#8217;s gluten free for you GF folks)</p>
<p>Garlic, minced</p>
<p>Olive oil</p>
<p>Italian Seasoning</p>
<p>Dry Basil herbs</p>
<p><strong>Directions:</strong></p>
<p>1-Cut the squash in half horizontally (Shortways) and scoop out the seeds.</p>
<p>2-You could steam it a number of ways, but we put it in a large tupperware with some water in it.  Wrap the tops with clear wrap and microwaved it for about 7-10 minutes.</p>
<p>3-While it&#8217;s microwaving, you can dice up some garlic (or if already diced), fry the garlic in olive oil for a little while to let the flavor come out.  Dump in the diced tomatos and then sprinkle some of the herbs into it.  (Just enough for your personal taste level).  Let simmer for a while.</p>
<p>4-After the squashes are steamed, scoop out the meat (Seems easier to do with a fork since they are a noodle-y texture).  Scoop your desired amount onto a plate.  Top it off with some of your diced tomato mix.  Enjoy!</p>

<p>Ingredients:</p>
<p>1 Acorn Squash</p>
<p>1/2 a green apple, cored and cut in chunks</p>
<p>1 Tbsp Maple Syrup</p>
<p>1 and 1/2 Tbsp Butter, melted</p>

<p>1-Cut the Acorn squash in half and scoop out the seeds</p>

<p>3-Mix butter, syrup, and apples together, and place in the halves of the squash</p>

<p>I also heard a while ago that <a href="http://www.bubbagump.com/">Bubba Gump Shrimp Co.</a> restaurants also offer gluten free dishes.  I can&#8217;t seem to find a specific menu on their site, but I know you can google it and review sites will tell you about it.</p>

			<content:encoded><![CDATA[<p>I picked up this <a href="http://gilliansfoods.com/">bread crumbs mix</a> at Whole Foods and thought &#8220;eh, why not?&#8221; and so I made Shawn chicken fingers.  Ding!  Post!</p>
<p>Ingredients:</p>
<p>1-Chicken Breasts&#8230;boneless, skinless, and sliced into strips</p>
<p>2-Egg whites</p>
<p>3-Bread Crumbs</p>
<p>Directions:</p>
<p>1-The Breading Assembly line please&#8230;Place egg whites in a bowl, then pour the breading onto another bowl (or plate), and then place a cookie sheet next to you (yes, a cookie sheet, you&#8217;ll be baking).</p>
<p>2-Preheat the oven for 350 degrees.</p>
<p>3-Begin coating your chicken with the egg whites, then the breading, and place them onto the cookie sheet.</p>
<p>4-When they&#8217;re all ready, place in the oven for about 16 minutes.</p>
<p>NOTE: Shawn suggests if you want the breading to be darker, you can probably set it to a slightly higher temperature&#8230;but this works fine if you don&#8217;t want to take chances.</p>
<p>5-Take out and enjoy!</p>
<p>We used Ranch dressing as dipping sauce and I&#8217;m actually not sure if that is gluten free, but you can probably use any dipping sauce that floats your boat and you&#8217;ll be fine. <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   Lucky for us, Shawn has &#8220;levels&#8221; of tolerance.</p>

			<content:encoded><![CDATA[<p>So Shawn and I figured that we could probably use ANY flour to make a fried chicken that he could eat.  Here is what we came up with:</p>
<p>Flour Breading:</p>
<p>1-Sweet Rice Flour</p>
<p>2-Garlic Powder</p>
<p>3-Ground Pepper</p>
<p>4-Sea Salt</p>
<p>Mix all that in a bowl (Mostly flour for the breading, a little bit of the rest for taste).</p>
<p>You also need:</p>
<p>1-Chicken (legs, breast, thighs, whatever you feel like breading and frying)</p>
<p>2-Egg whites</p>
<p>3-Oil</p>
<p>Directions:</p>
<p>1-After you&#8217;ve mixed all the Mix ingredients into a bowl and put the egg whites in another bowl, set the aside and prepare your (what I&#8217;ll call) the fried chicken prepping assembly line (as in chicken, egg whites, flour mix, pan with lots of oil in it).</p>
<p>2-While you&#8217;re heating the oil to just under medium, start coating your chicken in the egg whites, then the flour mix and set it aside (or in the pan if it&#8217;s already heated correctly).</p>
<p>NOTE: if you are cooking breasts or thighs, Shawn suggests putting the top-side (not bone-side) in first.</p>
<p>3-Cook till chicken is cooked and breading looks crispy.  The breading will be a lighter color than if you used wheat flour.</p>
<p>4-Take out and enjoy!</p>

<p><strong>Ingredients:</strong></p>
<p>1 large can pumpkin</p>
<p>1 1/2 cup sugar</p>

<p>1 can evaporated milk</p>

<p>1 yellow cake mix</p>
<p>1 stick butter</p>
<p>1 cup chopped pecans</p>
<p><strong>Directions:</strong></p>
<p>Mix pumpkin, sugar, milk, and spices. Add eggs and blend.</p>
<p>Pour into a 9 x 11 baking pan (spray with Pam)</p>
<p>Sprinkle cake mix on top and using a knife, swirl through the mixture once.</p>
<p>Cut butter into small pieces and sprinkle on top, followed by pecans.</p>
<p>Bake @ 350 degrees for 1 hr and 10 minutes</p>
<p><strong>Note: </strong>It can also be gluten free using a GF cake mix.  <a href="http://www.bettycrocker.com/products/gluten-free">Betty Crocker</a> now makes that.</p>

<p>Ingredients:</p>
<p>Ground turkey</p>
<p>Onion</p>
<p>Shredded Cheese</p>
<p>Tomatoes</p>
<p>Head of iceburg lettuce</p>
<p>(Taco Sauce even though we didn&#8217;t have any when we did it)</p>
<p>Optional: Spanish rice (I don&#8217;t know if the one we used was actually GF but if you find one that is, great!), guacamole, sour cream</p>
<p>&nbsp;</p>
<p>Directions:</p>
<p>Cut up tomatoes, set them aside.</p>
<p>Wash and peel parts of lettuce, set them aside.</p>
<p>Put cheese in a bowl.</p>
<p>Chop up the onion and mix with the ground turkey and cook as directed with the taco seasoning.</p>
<p>Cook up spanish rice, set aside.</p>
<p>Once everything is neatly separated into their own plate/bowl, then grab a piece of lettuce and start throwing whatever you like in your lettuce shell and enjoy!</p>

			<content:encoded><![CDATA[<p>A few months back, I was at Costco and I found the <a href="http://www.babycakesnyc.com/books.html">Babycakes</a> cookbook.  I&#8217;ve never been there, but it is apparently a pretty famous NYC bakery that bakes treats for vegans, and other people with food allergies.  There are a lot of gluten-free recipes in there.  I can&#8217;t wait to start trying to make some!  Hopefully I&#8217;ll post the successful ones here too.</p>
<p>On a side note, I&#8217;ve also gotten Shawn some GF treats from the following 2 bakeries and he loved them:</p>

<p>2-<a href="http://www.mariposabaking.com/">Mariposa</a> in Oakland, CA &#8211; I ordered stuff online, and I think some of this stuff is at Whole Foods</p>
