Oriental Cole Slaw

Salad
1 – 1 lb pre-packaged cole slaw mix
1/2 bunch scallions – sliced including the green tops
1 pkg Ramen noodle mix-beef flavor broken
1 cup sunflower seeds
1 cup sliced almonds-toasted

Dressing
Package of beef flavoring from Ramen noodle package
1/3 cup of olive oil
1/3 cup sugar
3 tablespoons white vinegar

Add all ingredients and shake. The dressing is best if it can be mad ahead of time
so the flavors blend together.

Empty cole slaw mix into a large bowl. Add green onions. Break ramen noodles and add to
bowl just before serving along with the sunflower seeds and the almonds (reserve some for
the top). Add dressing and toss. Serve immediately so the noodles, sunflower seeds and
almonds stay crunchy.

Somen Salad

1 pkg somen, boiled
lettuce, shredded
Ham or char siu pork, chopped
2 eggs, scrambled
1 kamaboko, chopped
3 stalk green onion, chopped
dash of MSG

SAUCE – mix ingredients in bottle
2 T sesame seeds
2 T sugar
1 tsp salt
1/4 C cooking oil
3 T vinegar
2 T shoyu

Lay somen in 9″ x 13″
Garnish with lettuce, meat

Fruity Salad (Not Fruit Salad)

I don’t know about some people, but I enjoy a good, fruity salad sometimes.  Here is what I usually do:

Put some spinach lettuce in a bowl.

Rinse some blueberries, cut strawberries, cut green grapes (if the grapes are HUGE then cut them in half, if not, leave them whole), and add them in.

Add some sliced almonds.

Use a raspberry vinaigrette.
